1. 1 Technical description
smokehouse YX series allows to make automatically heat processing of butcher products such as drying, cooking , smoking and baking. without any additional operations
– It is possible to use cold smoke technology in a smoke chamber model equipped with chilling(opiton)
– it is made of stainless steel designated for usage in the food industry, the inner and outside sheet steel are made of sus304.
– the reinforced panels (thickness 80 mm) are insulated by the mineral wool.
– the whole construction of chambers, the used material included, provides their long life, perfect temperature insulation, operation reliability and energy savings
– the stainless steel floor with reinforcing against breaking through, antislide surface.
– the switch-board and the smoke generator are also manufactured of SUS 304 stainless steel and the standard position of them are on the left or the right side. In case of a special requirement, it is possible to place the switch-board outside the chamber (on a wall e.g.) and the smoke generator behind the chamber
– the air circulating system provides uniform air stream, temperature distribution and high-quality of drying, smoking and cooking in every place inside the chamber
– the chamber is equipped by two-speed fan, which provides the change of the air speed according to the program step, the fan is placed above the each smoking trolley
– the smoke chamber is equipped by a system of sensors, which measure temperature and relative humidity in the chamber. It is also supplied with the core temperature sensor and supports the “Delta-T“ method.
– the system of air-operated flaps control air input and output in the chamber and also the balance of pressure in the chamber and the surroundings
– the smoke chamber is fit with the system of automatic washing
